PURPOSE: A method and an apparatus for extracting a yolk oil are provided to enhance the yolk oil extraction efficiency and the quality of the extracted yolk oil. CONSTITUTION: The yolk oil extraction device includes a raw material input unit(1) for introducing the powdered or particled egg yolk material(YEM), an oil extraction unit(2) placed under the input unit, a YEM remnant output unit with a remnant cutting member for cutting the YEM remnant continuously output from the oil extraction unit, and a control unit for controlling the operation of the raw material input unit, the oil extraction unit and the YEM remnant output unit. The raw material input unit has a cone-shaped hopper(11) for receiving and storing the powdered or particled egg yolk material(YEM), a material feeding member(12) for feeding the YEM material in a fluent manner, and a control member for controlling the amount of the YEM material to be fed. The oil extraction unit has a tube for carrying the material, a screw mounted within the tube to serve to carry the material, and a heater mounted on the external periphery of the tube to heat the YEM material.
