PURPOSE: Provided are Gu-hwang tea which is a kind of semi-fermented tea with an excellent taste and flavor, as well as functionality, and its manufacturing method through repetitive firing steps, and withering and fermentation steps. CONSTITUTION: The method of preparing Gu-hwang tea comprises the steps of: plucking tea leaves off, followed by sorting and parboiling them in a hot water containing salt for 3-5 minutes, wherein the weight ratio of water to salt is 798:1; drying the tea leaves in the shade, followed by firing at 28-32 deg.C for 3-5 minutes and drying them on the floor of 50-60 deg.C; fermenting the tea leaves, wherein they are characteristically gathered, covered with a wet towel on the floor of 75-85 deg.C and pressed by palms for 5 minutes; firing the tea leaves at 38-42 deg C for at least 5 minutes and rolling them on a straw mat; firing the leaves at 38-42 deg.C and drying them; and firing the tea leaves at 38-42 deg.C for 1 hour, followed by roasting them at 100 deg.C for 3-5 minutes.
