Extracting components (I) from organic material (M), comprising: (a) freeze-drying (M); (b) extraction with a solvent mixture (A) and with an organic solvent, or mixture, (B); (c) combining the two extracts to form a single phase; and (d) carrying out (trans)esterification in the apolar phase, using an alcohol in presence of a volatile acid, is new.
