PURPOSE: A fermented liquor using flower petals of acacia is provided, thereby the fermented liquor having distinct taste and aroma of acasia can be prepared. CONSTITUTION: The process for preparing the fermented liquor using flower petals of acacia comprises mixing a mixture comprising 70 to 99 wt.%, preferably 80 to 95 wt.% of rice, and 1 to 50 wt.%, preferably 5 to 30 wt.% of acacia flower petals with a conventional microorganism for preparing the fermented liquor; and fermenting the mixture, wherein the rice is selected from glutinous rice and nonglutinous rice; and the conventional microorganism for preparing the fermented liquor is Saccharomyces cerevisiae.
