PROBLEM TO BE SOLVED: To provide a protein coagulant excellent in hypercoagulability, by which foods with uniform and smooth palate feeling can be produced, in view of the fact that protein can be purely sorted from various kinds of coexisting materials using a coagulant in light of utilizing, in the area of biochemistry, such a nature of protein as to be precipitated and insolubilized at an isoelectric point, and to be coagulated under the acidic condition. SOLUTION: The protein coagulant contains an acidic material, emulsifier, and oil and fat. |
