PURPOSE: A fermented red ginseng containing ginseng saponin-lysates and a method of preparing the same are provided to produce a fermented red ginseng product which has the increased bioavailability of saponin. CONSTITUTION: A fermented red ginseng is obtained by fermenting a fresh ginseng with microorganisms, and repeatedly steaming and drying the fermented ginseng at 80-90 deg.C. The fermented red ginseng contains ginsenoside-Rg3, ginsenoside-Rg2, ginsenoside-Rh2, ginsenoside-Rh1, and one or more of the saponin-lysates, 20(S)-protopanaxadiol 20-O- -D-glucopyranoside, 20(S)-protopanaxadiol and 20(S)-protopanaxatriol. The microorganism used in the fermentation has the decomposability of saponin, and includes Lactobacillus, Bifidobacterium, or Saccharomyces. |
