PURPOSE: Provided are an additive composition for adjusting pH and preserving foods and a process for preparing the same. The additive composition shows no toxicity and is harmless to the human body. Therefore, it is applied to foods safely as well as to fish feeds. CONSTITUTION: An additive composition for adjusting pH and preserving foods is prepared by the steps of: heating 150-250 part by weight of purified water at 85-95 deg.C; dissolving 10 part by weight of sodium citrate, 14-22 part by weight of potassium chloride, 40-50 part by weight of potassium carbonate and 60-70 part by weight of lactinol in the boiled purified water; and leaving the solution for 24-48 hours then filtering it.
