METHOD FOR CONCENTRATING EXTRACTED SOLUTION OF COFFEE

PROBLEM TO BE SOLVED: To provide a method for concentrating an extracted solution of coffee by a reverse osmosis membrane, in which fouling is suppressed and efficient concentration is carried out even when the membrane is continuously used. SOLUTION: This method for concentrating the extracted solution of coffee comprises a step for adding a catabolic enzyme of the galactomannan having 1-50 units based on coffee solid content to the extracted solution of coffee to carry out enzymatic treatment of extracted solution of coffee and a step for concentrating the treated extracted solution of coffee by using the reverse osmosis membrane.
