PROBLEM TO BE SOLVED: To provide a mineral water former wherein mineral water of any desired mineral concentration can be formed by controlling the pass of a current to electrodes according to water qualities, water temperatures, etc. SOLUTION: The mineral water former is one comprising an electrolytic cell 4 into which raw water such as tap water is fed; a mineral source 41 placed in the cell 4; electrodes 42a and 42b for applying a direct current voltage which electrolyzes the water in the cell 4 and allows a mineral component to be eluted; and a means that sends the formed mineral water from the cell 4 to the outside of the cell 4 and having a structure having a water and like detection means that detects the water qualities, water temperatures, etc., of at least either of the raw water and the mineral water and a control means that controls at least either of a current pass time and an electric source output. Because the current pass time and the electric source output can thus be controlled according to the factors, such as quality and a temperature, of raw water, the formed mineral can be kept in a constant mineral concentration.
