PURPOSE: Provided is a manufacturing process of crab soy sauce and crab meat boiled in the sauce which contains the nutrients and taste and flavor peculiar to crabs, and stored for a long time. CONSTITUTION: A manufacturing process of crab soy sauce and crab meat boiled in the sauce comprises the steps of: collecting the internal organ of a crab and followed by concentrating and boiling it; obtaining soup generated while boiling process and filtering it; preparing crab soy sauce by mixing the obtain filtrate with soy sauce; mixing crab meat with the filtrate; crushing the crab meat and mixing it with crab soy sauce; and adding filling stuffs thereto and followed by vacuum packing and sterilizing them.
