A method for stabilization of strong wine materials to reverse colloid opacities provides selection of analyzed sample, determination of indices therein, selection of production treatment and subsequent treatment of wine material. In addition phenol substances, excess of polysaccharides and modification of oxidation-reduction potential are determined. In red wine materials the optical density is determined at waves lengths of 420, 520 and 620 nm. The production treatment plan is selected by comparison of specified and design indices with prescribed ranges of variation for every treatment plan.
