Disposing of residual food substances, comprising: (a) acidifying an organic filtrate; (b) exposing to a single-stage vacuum evaporator which extracts nutrients and inhibitor concentrates; (c) surrendering the vapor to a condenser and follow-on conditioning; and (d) recovering the vapor as water. At least 70 % of the nitrogen compounds in the bio-filtrate are converted to ammonium and dissolved in water by anaerobic methane fermentation. An Independent claim is also included for a commensurate assembly for the disposal of waste process food residues and other organic matter.
