PROBLEM TO BE SOLVED: To provide a diet supplement that is appetizing, contains large amounts of phenylalanine, alanine and valine effective for antiobesity by several tenfold concentration compared with that in the raw rice black vinegar conventionally used for dieting and further has high amino acid score so as to exhibit dieting effect more effectively and is helpful for the health maintenance and promotion during the diet. SOLUTION: The diet health supplement is produced through the following steps: (1) an amyloidal raw material is fermented with Aspergillus amylase as the first fermentation step; (2) the first fermentation product is treated with heat to stop the first fermentation; (3) the heat-treated product is subjected to the second fermentation with yeast; (4) the second fermentation is stopped by the second heating; (5) the second heat-treated product is subjected to the third fermentation with acetic acid bacteria; (6) the acetic acid fermentation is stopped by the third heating and (7) the smell of acetic acid is removed from the acetic acid fermentation mixture. |
