PROBLEM TO BE SOLVED: To provide unpolished rice cake in which a time required for water absorption treatment is shortened in a production process and production efficiency is improved and harsh taste is reduced without impairing the flavor and the taste of the unpolished rice. SOLUTION: This unpolished rice cake is obtained by carrying out water absorption treatment of the unpolished rice for a short time, boiling the unpolished rice to provide water-absorbed unpolished rice having 40-47% water content and forming the water- absorbed unpolished rice into a cake. The method for producing the unpolished rice cake comprises carrying out wet heat treatment of the unpolished rice to which forced sprouting is applied, drying the unpolished rice and forming the dried unpolished rice into a cake. The treating time of water absorption is preferably 1-4 hr. Unpolished rice obtained by carrying out forced sprouting treatment of unpolished rice and drying the treated unpolished rice is preferably used as the unpolished rice. The unpolished rice cake is excellent in texture and flavor and germinated unpolished rice obtained by carrying out wet heat treatment of the unpolished rice and then carrying out drying treatment of the unpolished rice is used as the raw material for rice cake, the resultant unpolished rice cake is excellent also in taste and suitable as a health food which general persons widely always eat. Water absorption time on cake production process can be shortened by the production method. |
