The vertically positioned fish (4) is rotated about its length axis (21) whilst moving a blade (11) in contact with the fish at a given angle and elastic tension in the fish length direction. A method useful in the canning industry for skinning tuna or other species of fish, especially bluefin tuna, bonito, swordfish or shark, comprises a highly automated mechanical process involving the following steps : (a) the frozen fish is placed in a vertical position by hanging it by its head or tail ; (b) applying at least one blade to the side of the fish at a given angle and elastic tension ; (c) rotating the fish about its length axis ; (d) moving the blade in the direction of the fish length axis, so that the combination of the linear motion of the blade and rotation of the fish causes a spiral cutting action over the entire surface of the fish ; and (e) stopping the rotation of the fish, removing the blade and taking the fish down from its hanging. An Independent claim is also included for the skinning device.
