摘要 FIELD: food, pharmaceutical and cosmetics industry. SUBSTANCE: invention deals with methods of extraction of vegetable and fruit and berries stock. Stock extrusion is carried out in rotor-pulse apparatus in clearance between stator and rotor with speed gradients lying in range 3,4.105 - 6,9.103m/s by means of water and alcohol mixture with concentration of ethyl alcohol 50-70% at room temperature under water consumption per unit of time and area from 1:2.5 to 1:12.
