PURPOSE: A method of preparing the titled seasoning composition by adding a dried croaker(yellow corbina), a herbal plant material and a fruit concentrate to red pepper paste to impart a flavor and nutrition to food is provided. The composition has a characteristic taste and flavor and is expected to be useful in the prevention and treatment of adult disease. CONSTITUTION: The red pepper paste seasoning composition is prepared by mixing 40% by weight of red pepper paste, 40% by weight of slices of dried croaker, 10% by weight of a herbal plant material concentrate and 10% by weight of a fruit concentrate and then aging for 30 days or more. The red pepper paste is prepared by kneading starch with a liquid containing powdered malt and amylase enzyme, saccharifying at 60deg.C or less and then aging with fermented soybean paste powder, red pepper paste and salt. The herbal plant material is selected from the group consisting of Puerariae Radix, Angelicae Koreanae Radix, Sophorae Radix, Raphani Semen, Arecae Pericarpium, Pinelliae Rhizoma, Adenophorae Radix, Cimicifugae Rhizoma and the like. |
