SOYBEAN MILKS CONTAINING EPA AT HIGH CONCENTRATION AND PROCESS FOR PRODUCING THE SAME

Soybeans containing fish oil-origin EPA and/or DHA at a high concentration, in particular, soybean milks which are efficacious against hyperlipemia and yet have a high nutritional value. Soybean milks to which triglycerides or ethyl esters containing 10% or more of EPA are added at a ratio exceeding 25% base d on the soybean protein in the soybean milks. These products are produced by preparing soybean milks in a series of steps and then adding fish oil to the soybean milks followed by stirring. These products are functional foods efficacious against hyperlipemia. It is preferable that the triglycerides ar e in the form of fish oil, still preferably refined fish oil. It is preferable that the fish oil contains EPA and/or DHA in a controlled amount, more particularly speaking, contains 25% or more of EPA and DHA in total, preferably 28% or more of EPA. The soybean milks are arbitrary soybean milks containing 3% or more of solid matters selected from among modified soybean milks, soybean milk drinks, acidic soybean milks andtofuprepared by solidifying soybean milk.
