PROBLEM TO BE SOLVED: To provide jiaozi (fried dumpling stuffed with minced pork) which uses the stems, leaves, and juices of Allium victorialis L. as materials, can effectively use the Allium victorialis L. as a nutritious and robust food material in a state free from a characteristic smell, and has a new taste different from that of conventional jiaozi. SOLUTION: Washed Allium victorialis L. is cut into stems and leaves. The cut stems are pickled in a pickling sauce for about two to three months and then cut into fine stem pieces. The cut leaves are crushed with a blender or the like, and then filtered to separate the fibrous material from the garlic juice. A part of the fibrous material is pickled in the pickling sauce for about 2 to 3 months. The suitable amount of fine stem pieces, the sauce-pickled fibrous material, minced meat, and the like, are mixed with each other to prepare a material for the jiaozi. Wrapping paste for the jiaozi is prepared from a proper mixture of strong flour, the fibrous material, and the garlic juice. The material for the jiaozi is wrapped with the paste for the jiaozi and then fried or steamed. |
