PROBLEM TO BE SOLVED: To provide a method and an apparatus for molding meat with which the molding and freezing of the meat can be performed efficiently. SOLUTION: The method comprises a raw material-introducing process in which a raw material M is introduced into a molding container 2, a molding freezing process in which the raw material meat M is molded by pressing in the molding container 2 and at the same time cooled with liquefied nitrogen to freeze the meat, and a carrying out process in which the molded meat M is carried out from the molding container 2.
