PURPOSE:To provide a method for producing a solution, having a high content of water-soluble vitamins, abundantly containing the water-soluble vitamins and good in flavor by using rice bran and/or brown rice as a raw material. CONSTITUTION:This method for producing a solution having a high content of water-soluble vitamins is to add water to rice bran and/or brown rice flour, then add a liquefying type amylase, heat-treat the resultant mixture, thereby previously hydrolyze starch to some extent, subsequently add a cellulase, a protease and a saccharifying type amylase thereto, carry out the enzymic treatment, then centrifuge or filter the treated mixture, remove an oil and fat part, subsequently inoculate lactic acid bacteria thereinto and ferment the resultant mixture. |
