Disclosed is a device for slicing food products, comprising a cutting head (1) and a product supply with a food product guide, food product holding means and an advancing feeder device, characterized in that the cutting head (1) consists of a first part which is firmly connected to the base frame and which comprises a drive unit (2), and a second part (4) which comprises the rotating blade (10), whereby the second part is mounted in such a way that it is limitedly displaceable relative to the first part (5) parallel to the axis of rotation of the blade (10), and an actuating device is also provided, said actuating device being controlled according to the blank cuts thus conveyed and used to modulate the position of the second part (4) of the cutting head (1) between a first position corresponding to the cutting position of the blade (10) and a second position (10) corresponding to a blank cut position of the blade (10).
