The invention concerns a method for preparing oligomers of at least a galactomannan, characterised in that it consists in subjecting a mixture comprising at least a galactomannan in solid form and water, but free of oxidising agent and acid, to an extrusion cooking treatment, whereof the specific mechanical energy ranges between 140 and 220 Wh/kg and the temperature at the product head ranges between 80 and 180 DEG C.
