PROBLEM TO BE SOLVED: To provide an apparatus for producing frozen dessert, capable of preventing cooling water in a water-cooling compressor from being frozen during heat sterilization. SOLUTION: This apparatus for producing frozen dessert comprises a heating cycle where a high-temperature cooling medium discharged from a compressor during heat sterilization operation is supplied to a cylinder cooler and a hopper cooler to heat the medium followed by letting run out to the water-cooling compressor; wherein a cylinder hot gas valve 34 for controlling supply of the high-temperature cooling medium to the cylinder cooler, and a hot-gas return sensor 62 for detecting the temperature of the cooling medium joining to each other after coming out from the hopper cooler and the cylinder cooler during heating cycle are provided, and a microcomputer 46 works to throttle the cylinder hot gas valve until the temperature rises into a prescribed return temperature when the temperature detected by the hot gas return sensor decreases into the prescribed lower limit value.
