In a process to prepare fast food e.g. bread rolls or baguettes ('French Bread') with a filling, the filling e.g. cheese, tomato, lettuce, cucumber is pre-packed in a sealed plastic shell and stored in a refrigerator at 2-7 deg C until required. The bread is held separately at readiness and is finally baked as required. After final baking, the bread is stored at 14-16 deg C. The filling is removed from the fridge and sealed pack immediately prior to sale and consumption. |
