FIELD: food industry, particularly, conservation of fruits and vegetables. SUBSTANCE: method involves treatment of raw material with water in rotor-cavitation extractor without oxygen access. Proposed method provides step-by-step increasing of cavitation index and introduction of additional quantity of raw material. Simultaneously, introduced is a preparation produced from biomass of microorganisms according to preset technology and selected from preset group. Upon completion of treatment, flavoring is introduced, and final product is prepacked and sterilized. EFFECT: improved organoleptical properties of final product. 2 cl |
