It is intended to provide a blue colorant preparation of Cape jasmine (Gardenia jasminoides) having a bright color tone of blue or green with little reddish or purplish color. This colorant preparation can be obtained by blending polyphenol with a blue colorant of Cape jasmine prepared by treating iridoid glycoside with &bgr;−glucosidase in the present of a protein digestion product, or treating iridoid glycoside and a protein digestion product with &bgr;−glucosidase in the presence of polyphenol in the process of producing the blue colorant preparation of Cape jasmine.
