<p>The invention concerns an ice confectionery product, in particular moulded based on water ice having a soft core texture, comprising: (i) a water ice core containing 20 to 40 wt. % of solids, overrun in a proportion of 20 to 80 % and whereof the texture is similar to that of an extruded ice cream, containing as the case may be chunks and (ii) a non-swollen water ice shell containing 20 to 35 wt. % of solids.</p> |
