PROBLEM TO BE SOLVED: To provide inexpensive stainless steel for a metal gasket which can be used in a temperature region of >600 deg.C, and to provide a metal gasket. SOLUTION: The stainless steel for a metal gasket having excellent high temperature setting resistance has a composition containing, by mass, 0.05 to 0.15% C, <=1.0% Si, <=2.0% Mn, <=2.0% Ni, 9.0 to 15.0% Cr, 0.5 to 4.0% Cu, <=2.0% Mo, <=0.10% N and <=1.0% Nb, and, if required, further containing one or more kinds selected from <=0.50% Ti, <=0.20% Al, <=0.015% B, <=0.20% rare earth metals, <=0.20% Y, <=0.10% Ca and <=0.10% Mg, and, in which the content of each element is controlled so that the value ofγmax defined byγmax=420C+470N+23Ni+7Mn+9Cu-11.5Cr-11.5Si-12Mo-3.5Nb+189 reaches >=80, preferably, >=100, and the balance Fe with inevitable impurities.
