<p>Use of glucosides of formula (I) as a surfactant in cosmetic and dermatological emulsions having at least one aqueous phase, is new. R = 4-24C alkyl. At least one of the aqueous phases contains one or more dissolved electrolytes and has an ionic strength of at least 0.075 M.</p>
