PROBLEM TO BE SOLVED: To produce a method for producing a fumaric acid monoester which is safe and has good hue and capable of being used for medicines and foods in a high isomerization degree in a state scarcely giving loads to waste water. SOLUTION: This method for producing the fumaric acid monoester comprises adding 0.05 to 0.5 mole of a 6 to 22 C fatty acid chloride to 1 mole of a maleic acid monoester and then subjecting the mixture to an isomerization reaction at 40 to 150 deg.C. Preferably, the method for producing the fumaric acid monoester comprises adding 0.05 to 0.5 mole of the 6 to 22 C fatty acid chloride to 1 mole of the maleic acid monoester, subjecting the mixture to the isomerization reaction, adding an alkali aqueous solution in an amount of 0.95 to 1.4 molar equivalent based on the fatty acid chloride to the reaction product, stirring the mixture, and then washing the product with water.
