PROBLEM TO BE SOLVED: To provide a method for producing fumaric acid and/or malic acid from maleic acid, by which water in the reaction system is not colored and can be recycled without lowering the purity of the products. SOLUTION: This method for producing the fumaric acid and/or the malic acid from the maleic acid comprises substituting air in a reaction vessel with an inert gas or steam and then subjecting the fumaric acid and/or the malic acid to a transition reaction and a hydration reaction.
