PURPOSE: A method of preparing a reaction flavor by enzymatically hydrolyzing a piece of small fragments of snow crab meat as a by-product of a snow crab processing process, concentrating and then reacting a precursor material is provided which reduces production cost and avoids environmental pollution. CONSTITUTION: A by-product generated by processing a snow crab is subjected to enzymatic hydrolysis at 40 to 70deg.C for 2 to 6hr using Flavourzyme or Alcalse(Novo Nordisk Korea Ltd.) as a commercially available enzyme, the obtained hydrolysate is filtered and concentrated and reacted with precursor material selected from sugar, amino acid, hexane, thiamin, furaneol(Firmenich Co.) and a mixture thereof. The enzymatic hydrolysis is performed under the hydrolysis condition of a ratio of 2.0 to 6.0% by weight of and enzyme/substrate.
