SOLUTION: This taste-improving agent of the processed starch food or the processed fish meat food contains the vegetable essence prepared from one or more species selected from flavor vegetables, tomatoes, spices and mushrooms as the raw materials. The taste-improving agent is able to reduce or remove smells particular to starch or bad smells particular to fish meat by adding the taste-improving agent to the processed starch food or the processed fish meat food.
