<p>A process for producing a 2-amino acid represented by the general formula [II]: RCH(NH2)COOH (wherein R represents hydrogen, optionally substituted C1-6 alkyl, optionally substituted C2-6 alkenyl, etc.), characterized by hydrolyzing a 2-aminonitrile represented by the general formula [I]: RCH(NH2)CN (wherein R has the same meaning as defined above) in an aqueous amine solution with the aid of a biocatalyst having nitrile hydrolysis activity to thereby convert it into the 2-amino acid represented by the general formula [II].</p> |
