PROBLEM TO BE SOLVED: To obtain good-quality less oxidated yolk oil oxidation by a safe, inexpensive and simple method. SOLUTION: The method for producing the yolk oil comprises the steps of treating yolk with a protease, adding water to the thus treated yolk at several weight times the yolk followed by agitation, and then admixing an organic acid such as acetic acid into the system to effect extracting the yolk oil and allowing it to float on the surface of the system. |
