Processes for producing inulin by bringing an inulin synthase in contact with sucrose to thereby form inulin, characterized in that 1 the average degree of polymerization is regulated by controlling the sucrose concentration 2 the average degree of polymerization is regulated by controlling the contact temperature and/or 3 when the sucrose is consumed by the inulin synthase thereby attaining the equilibrium, sucrose is further added and thus the inulin-forming reaction is continued. Inulin having a definite average degree of polymerization thus produced is also provided.
