PROBLEM TO BE SOLVED: To provide a treating method for organic waste which is effectively stable without the influence of ammonia in the anaerobic treatment of the organic waste. SOLUTION: In the anaerobic treating method for the organic waste, ammonia is fixed by adding a seed crystal, a phosphate and/or a magnesium compound to an anaerobic treatment sludge in an anaerobic treating vessel. In the treating method for the organic waste and the equipment, therefor ammonia is fixed by adding the seed crystal, the phosphate and/or the magnesium compound to the anaerobic treatment sludge taken out of the anaerobic treating vessel for anaerobic treating of the organic waste. Magnesium ammonium phosphate or magnesium phosphate or calcium phosphate is desirable as the seed crystal.
