RETORT SWEET RICE DRINK COMPOSITION

PURPOSE: A fermented sweet rice drink(shikhye) composition obtained by substituting sugar with stevioside as a sugar substitute sweetener is provided. It has excellent calorie-reducing effect while maintaining conventional sweetness. CONSTITUTION: The retort fermented sweet rice drink composition contains stevioside as a low-calorie sweetener in an amount of 10 to 30% by weight of sugar to be added. For an example, hard-boiled rice is saccharified with malt liquid for 3 to 6hr at 55 to 60deg.C and then subject to a separation process for separation of sweet rice liquid from a grain of cooked rice. The sweet rice liquid is heated, filtered and retort-sterilized for 15min at 121deg.C after mixing with a grain of cooked rice.
