PROBLEM TO BE SOLVED: To prepare a cream, capable of making the meltability in a mouth compatible with heat-resistant shape retaining properties and having good whipping operation efficiency. SOLUTION: The oil and fat for a cream comprise >=30wt.% fractionated palm hardened oil having >=70% solid fat content index (SFC) at 10 deg.C, >=50% SFC at 20 deg.C and <=20% SFC at 35 deg.C and has 20-40 deg.C melting point. |
