Cheese block forming tower with curd sensors

A cheese block forming tower (1) for a "multi-tower" installation includes nominal "charged" (H) and "discharged" (L) sensors reading the height of curd in the tower. These are separated by a height that equates to the curd used in a multiple of blocks. Measuring the time the curd level takes to drop from sensor H to L gives controller (C) a measure of the rate of production of the tower. This may be combined with the rate of production of blocks to adjust the output of block severing devices (7) or the charge rate of curd to balance the outputs of the multiple towers (1).
