PURPOSE: Provided are stable acarbisine glucosyl ascorbate and a preparation method which effectively inhibits enzymes decomposing hydrocarbons such as α-amylase and glucosidase and also functions as an antioxidant. CONSTITUTION: The preparation method comprises reacting acarbose with saccharide transferring amylase in the presence of ascorbic acid, wherein the amylase is selected from a group consisting of Bacillus stearothermophillus amylase(BSMA), Bacillus licheniformis and Thermus sp. amylase(ThMA).
