Some edible fats having high alpha-linolenic acid concentrations show practically same organoleptic characteristics as more customary fats (e.g. sunflower oil) and relatively the same oxidation stability. These fats contain following components (all wt.%-s): 5-60 linolenic acid 5.5 max. alpha-linolenic acid. 1.0 max. gamma linolenic acid, eicosapentaenoic-acid (EPA) and docosahexaenoic acid (DHA). Based on the wt.%-age of alpha-linoleic-acid the minimum wt. of gamma-tocopherol + gamma-tocotrienol is 15 mg/kg. and on the same basis the total tocopherol + tocotrienol concentration is at least 35 mg/kg. |
