The table for work on dough for puff and flaky pastries is converted from a conventional work table by installation of a refrigerator housing (3) underneath the stainless steel table top (2). This allows the dough approximately at 30 [deg]C to be cooled down to about 4 [deg]C with an accuracy of 1 to 2 degrees.
