FLAVONOL AND CYSTEINE CONJUGATES

The invention relates to novel products produced from the conjugation of flavonols with cysteine. The novel molecules are obtained from polyphenolic plant extracts by means of conjugation with the natural cysteine amino acid. In this way, novel products with antioxidant/antiradical properties are generated which can be used as agents to protect the body against disorders such as cancer, cardiovascular diseases and premature ageing. The resulting pure molecules are more effective antioxidants than the individual components (flavonols and cysteine) thereof. The concept of novel products derived from cysteine having antioxidant properties extends from the pure molecules to mixtures thereof, thiolysis crudes and partially purified fractions. The invention also relates to the method of isolating and purifying the novel compounds using complex mixtures.
