PROBLEM TO BE SOLVED: To provide a high-performance freezing apparatus and freezing method to enable the freeze storage of foods, etc., without destructing the cell. SOLUTION: A freezing object held in the inner space of a freezing chamber is quickly cooled to a prescribed temperature while suppressing the freezing of water by applying a variable frequency AC electric field having a frequency varying within 50 Hz to 5 MHz and optionally applying a magnetic field or further applying ionized air flow together with cold air flow and the precooled food is instantaneously frozen at the prescribed temperature. The magnetic field is preferably static field and/or varying field. A far infrared radiation absorbing member is preferably placed on the inner wall of the freezing chamber.
