PROBLEM TO BE SOLVED: To provide an antimicrobial agent which is widely used in Sake, Miso, soy sauce, and the like from ancient times in Japan, has confirmed safety, and is originated from Aspergillus oryzae, while conventional various known antimicrobial substances have side effects and mostly are not safe for human bodies. SOLUTION: (1) This antimicrobial agent is characterized by containing hydroxyapergillic acid as an essential ingredient. (2) The antimicrobial agent wherein the hydroxyapergillic acid is obtained from the water-soluble fraction of an Aspergillus oryzae culture product. (3) The antimicrobial agent wherein the hydroxyapergillic acid is obtained from the water-soluble fraction of an Aspergillus oryzae N2 (accession number FERM P-18306) culture product. (4) The antimicrobial agent has activities against all of gram positive bacteria, gram negative bacteria, yeasts, and molds.
