PROBLEM TO BE SOLVED: To provide an oil and fat composition for a fry oil, spray oil or the like, having good flavor, emitting good smell when heated, without odd smell and taste each inherent in a linseed oil or a perilla oil in spite of using an oil and fat containing >=45 wt.% of an α-linolenic acid having such a defect as to emit odd smell when heated, or as to spoil the flavor of fry products or spray oil-added confectionery, and to provide a method for producing the oil and fat composition. SOLUTION: The oil and fat composition contains 30-60 wt.% of edible oil and fat derived from rice and 5-10 wt.% of oil and fat comprising >=45 wt.% of an α-linolenic acid. |
