PRODUCTION OF FUNCTIONAL ICE CREAM CONTAINING CITRUS JUNOS TANAKA

PURPOSE: A method for producing functional ice cream by adding Citrus junos Tanaka juice and Grand mania liquor to ice cream material is provided. Whereby, the prepared ice cream is removed from an unpleasant bitter or astringent taste and maintains the flavor and taste peculiar to Citrus junos Tanaka. CONSTITUTION: The method for producing functional ice cream is characterized by adding 0.5 to 10% by weight of Citrus junos Tanaka juice and 1 to 20% by weight of Grand mania liquor to general conventional ice cream material including milk, fresh cream, starch sugar, condensed milk and gelatin, based on 100% by weight of ice cream.
