PURPOSE: Provided is a preparation method of kimchi by applying grapefruit seed extract and citric acid thereto as active ingredients, thereby improving storageability of kimchi and minimizing taste change. CONSTITUTION: The method comprises the steps of: salting vegetables, such as cabbage, radish, young radish, korean lettuce, leaf mustard and the like, in salt water of 8-10% for 10-14 hours; washing salted vegetables with water soluble solution containing grapefruit seed extract and citric acid 1-3 times, wherein the grapefruit seed extract is obtained by blending dried grapefruit seeds then extracting them with hot water, ethanol or glycerin; dewatering the washed vegetables; and cutting the vegetables then stuffing the vegetables with filling consisting of chili powder, garlic, spring onion, ginger and the like.
